This vegan basil almonds dip will be a great addition to anything from pasta to sandwiches to roasted or fresh vegetables. Toasted almonds give this pesto a perfect crunch while the freshness of citrus brightens up the flavors. Try spreading it on the toast and adding any vegetables you have in the fridge. It will make a great snack or nutritious addition to your breakfast.
Basil Almonds Dip
Ingredients
- 4 cups basil
- 1/3 cups almonds
- juice of 1 lemon, about 2 tablespoons
- 2 cloves garlic
- 1 cup olive oil
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Toast almonds in a dry pan for about 5 minutes, tossing frequetly and making sure it doesn't burn.
- Set aside to cool.
- Add basil, nuts, lemon juice, garlic, salt and peper to a food processor or a high speed blender.
- Start pocessing on a medium speed and drizzle in the olive oil in a slow steady stream.
- Stop the machine when the olive oil is all mixed in, scrape down the sides of the bowl and contitue processing until you reach a desire consistency.
- Add more olive oil if pesto is too thick.
