This garlic dip is so delicious that you will want to eat it with anything and everything. Or even spoons full of it, just all by itself. Garlicky, lemony and smooth in texture. Put it on your sandwiches, eat it with veggies or enjoy it with pita bread. You will always want to keep a batch of it in the fridge. Trust me, it’s that good.
Garlic Dip
Ingredients
- 1 cup garlic cloves, peeled
- 1 lemon, juiced
- 1 potato, peeled and boiled
- 2 tsp salt
- 3 cup canola or grapeseed oil
Instructions
- In the food processor, add garlic cloves and salt.
- Process it until well incorporated, scraping sides of the bowl from time to time.
- When garlic and salt are well minced, switch the food processor to the slowest speed and start pouring the 1/2 cup of oil with the steady stream.
- Add 2 teaspoons of lemon and pour another 1/2 cup of oil.
- Repeat until all lemon and oil are well incorporated.
- Add a boiled potato to the food processor and blend it until the texture is very smooth.
- Try it and adjust the seasoning.
- Serve and enjoy!
