Ingredients

garlic cloves, peeled

lemon, juiced

potato, peeled and boiled

canola or grapeseed oil
Instructions
In the food processor, add garlic cloves and salt.
Process it until well incorporated, scraping sides of the bowl from time to time.
When garlic and salt are well minced, switch the food processor to the slowest speed and start pouring the 1/2 cup of oil with the steady stream.
Add 2 teaspoons of lemon and pour another 1/2 cup of oil.
Repeat until all lemon and oil are well incorporated.
Add a boiled potato to the food processor and blend it until the texture is very smooth.
Try it and adjust the seasoning.
Serve and enjoy!
