Garlic Dip

Ingredients
  

  • 1 cup garlic cloves, peeled
  • 1 lemon, juiced
  • 1 potato, peeled and boiled
  • 2 tsp salt
  • 3 cup canola or grapeseed oil

Instructions
 

  • In the food processor, add garlic cloves and salt.
  • Process it until well incorporated, scraping sides of the bowl from time to time.
  • When garlic and salt are well minced, switch the food processor to the slowest speed and start pouring the 1/2 cup of oil with the steady stream.
  • Add 2 teaspoons of lemon and pour another 1/2 cup of oil. 
  • Repeat until all lemon and oil are well incorporated.
  • Add a boiled potato to the food processor and blend it until the texture is very smooth.
  • Try it and adjust the seasoning.
  • Serve and enjoy!
