Here is what you need for your 4th of July picnic! Chili Carrot Dog! This carrot dog is full of flavor. It has a smokey flavor of the roasted spiced carrot, creaminess of avocado, spiciness of chili and jalapeño. Try it with our Vegan 30 Minutes Chili . Who said vegan hot dog can’t be healthy and delicious at the same time?
Chili Carrot Dog
Ingredients
- 6 carrots, peeled
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/4 tsp cayenne pepper
- 1 tsp kosher salt
- 1 cup vegan 30 minutes chili or any other vegan chili
- 1 avocado, diced
- 1/2 yellow onion, diced
- 1 jalapeno, sliced
- 1/4 cilantro leaves
Instructions
- Preheat the oven 350F.
- Line the baking sheet with the parchment paper.
- In a small bowl mix olive oil, cumin, smoked paprika, cayenne pepper and salt.
- Rub the carrots with with oil and spices mixture.
- Place carrots on the baking sheet and bake it for about 30 minutes until its tender.
- Turning the carrots on the other side half time through the cooking time.
To arrange the hot dogs
- Place the carrots inside each bun.
- Place vegan chili on top of carrots, put some diced onion, diced avocado, slices of jalapeño, and sprinkle it with cilantro leaves.
- Serve and enjoy!
