On a rainy day or when I crave comfort food, I’m making this lemony red lentil soup. The recipe is so simple and delicious. Try this comforting soup for lunch or dinner and you will fall in love with this hearty and filling dish. So simple to make, you will be cooking it so often on your busy evenings.
Comforting Red Lentil Soup
Ingredients
- 1 yellow onion, chopped
- 2 garlic cloves, minced
- 1/2 cup red lentil
- 6 cups vegetable broth or filtered water
- 1 medium carrot, shredded
- 2 potatoes, cut in cubes
Instructions
- Heat the olive oil in a medium pot.
- Add onion and garlic and sauté it till translucent and fragrant.
- Meanwhile, rinse lentil with water.
- Add lentil to the pot, add broth or water and bring it to boil.
- Lower the heat and simmer the soup for about 20 -25 minutes till it's smooth.
- Add shredded carrot and diced potato if you use it.
- Keep simmering the soup stirring occasionally, until potatoes are soft.
- Serve the soup with the splash of lemon juice and enjoy!
