Comforting Red Lentil Soup

Ingredients
  

  • 1 yellow onion, chopped
  • 2 garlic cloves, minced
  • 1/2 cup red lentil
  • 6 cups vegetable broth or filtered water
  • 1 medium carrot, shredded
  • 2 potatoes, cut in cubes

Instructions
 

  • Heat the olive oil in a medium pot.
  • Add onion and garlic and sauté it till translucent and fragrant.
  • Meanwhile, rinse lentil with water.
  • Add lentil to the pot, add broth or water and bring it to boil.
  • Lower the heat and simmer the soup for about 20 -25 minutes till it's smooth.
  • Add shredded carrot and diced potato if you use it.
  • Keep simmering the soup stirring occasionally, until potatoes are soft.
  • Serve the soup with the splash of lemon juice and enjoy!
