You guys, this is the easiest sandwich you will ever make. It is also as healthy as a bowl of salad with couple slices of bread (yes, I’m looking at you, Sweetgreen ). You see, I have two kids and I work from home. The fancy gourmet lunch is just not an option for me but this simple and filling sandwich makes me feel like I do a take out from a busy city deli everytime I make it.
Try this sandwich with our Simple Traditional Hummus recipe.
Garden Vegetables Sandwich
Ingredients
- 2 slices pumpernickel bread
- 4 tbsp hummus
- 1/2 tomato, sliced
- 1 persian cucumber, sliced lengthwise
- 1/2 avocado, sliced
- 1/2 cup arugala
Instructions
- Spread hummus on both slices of bread.
- Fill the sandwich with tomato, cucumber, avocado, and arugula.
- Slice in half and serve.
