Happy Buddha Plate with Tahini Dressing

I’d like to introduce you to my happy meal. This warm buddha bowl with garlicky tahini sauce is my ultimate comfort food of all. This plate is a combination of warm and cold ingredients brought together with this tangy tahini dressing is a heaven on a plate. So simple and so nourishing, it has everything you need for a hearty lunch or dinner. It is absolutely perfect! Turmeric sweet potatoes go so well with the creaminess of avocado and the nutty flavor of tahini. Beware mac and cheese, new comfort food is in town and it’s here to stay.

Happy Buddha Plate with Tahini Dressing

Ingredients Method Notes

Ingredients
  

  • 2 sweet potato, cut into cubes
  • 1 tbsp olive oil
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1 cup qunioa, rinsed
  • 2 cups water
  • 1/4 kosher salt
  • 1 cup black beans
  • 2 avocado, cut into cubes
  • 2 cup spinach
For Tahini Dressing
  • 5 tbsp tahini
  • 1 garlic, crushed
  • 1/2 lemon, juiced
  • 1/2 tsp kosher salt

Method
 

  1. Place cut sweet potatoes in the bowl. Add olive oil, turmeric,cumin and salt.  Roast at 425 F for about 30 minutes, tossing it occasionally. 
    Place quinoa in a pot. Add water and salt. Bring it to boil. Lower the heat and simmer it until the water evaporates. Fluff quinoa with the fork.
    For the dressing, place all the ingredients in the bowl and whisk it together. Add some iced water if the dressing is too thick. Adjust the seasoning.
    To arrange the plate, place some beans, spinach, sweet potatoes, avocado, quinoa on a plate or a deep bowl, pour a generous amount of tahini dressing and enjoy!
