Place cut sweet potatoes in the bowl. Add olive oil, turmeric,cumin and salt. Roast at 425 F for about 30 minutes, tossing it occasionally. Place quinoa in a pot. Add water and salt. Bring it to boil. Lower the heat and simmer it until the water evaporates. Fluff quinoa with the fork.For the dressing, place all the ingredients in the bowl and whisk it together. Add some iced water if the dressing is too thick. Adjust the seasoning.To arrange the plate, place some beans, spinach, sweet potatoes, avocado, quinoa on a plate or a deep bowl, pour a generous amount of tahini dressing and enjoy!
