Oh! Comfort food! Scalloped Sweet Potatoes are so scrumptious and creamy. Garlic and ginger base, sweet potatoes and coconut cream. It is sweet with the pungent notes from turmeric and cumin. Coconut and sweet potatoes are such great match. This dish is full of healthy ingredients. And honestly, can someone please give me a large spoon cause I can’t stop eating it.
Scalloped Sweet Potatoes with Turmeric
Ingredients
- 2 pounds sweet potatoes, cut into 1/8 thick slices
- 2 cloves garlic, crushed
- 2 13.5oz cans coconut cream
- 2 tsp kosher salt
- 1/2 tsp cumin
- 2 tsp turmeric
- 1 inch fresh ginger root, minced
Instructions
- Preheat the oven 425F
- Spread minced garlic and ginger root on the bottom of the baking dish
- Place thin potato slices in the dish in layers
- Mix salt, turmeric, cumin with the coconut cream
- Pour coconut cream mixture over potatoes
- Place pototoes in the oven and bake it for about 30 minutes until pototoes are soft
- Serve and enjoy!
