Scalloped Sweet Potatoes with Turmeric

Ingredients
  

  • 2 pounds sweet potatoes, cut into 1/8 thick slices
  • 2 cloves garlic, crushed
  • 2 13.5oz cans coconut cream
  • 2 tsp kosher salt
  • 1/2 tsp cumin
  • 2 tsp turmeric
  • 1 inch fresh ginger root, minced

Instructions
 

  • Preheat the oven 425F
  • Spread minced garlic and ginger root on the bottom of the baking dish
  • Place thin potato slices in the dish in layers
  • Mix salt, turmeric, cumin with the coconut cream
  • Pour coconut cream mixture over potatoes
  • Place pototoes in the oven and bake it for about 30 minutes until pototoes are soft
  • Serve and enjoy!
