Baked Green Tomatoes

Ingredients
  

  • 1 pound green tomatoes, sliced 1/2 inches thick
  • 1 cup whole wheat flour
  • 1 cup vegan bread crumbs
  • 1 1/2 tbsp avocado oil
  • 1 1/2 tbsp water
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

for Spicy Smoked Paprika Aioli

  • 1 cup vegan mayo
  • 1/2 lemon, jucied
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/4 tsp cayenne papper
  • kosher salt to taste

Instructions
 

  • Line a baking sheet with the parchment paper.
  • Preheat the oven 425 F.
  • Place flour, and bread crumbs in 2 separate bowls and set aside.
  • Mix avocado oil, water and baking powder in the third bowl.
  • Dip the tomato slices first in the flour, then in the oil mixture, and lastly in the bread crumbs.
  • Season each slice with salt and pepper, drizzle it with a little oil. Place it on the prepared baking sheet.
  • Bake the tomato slices for about 30 minutes turning it to the other side half way through baking time.

Spicy Smoked Paprika Aioli

  • Mix all the ingredients in the bowl.
  • Adjust the seasoning and enjoy!
