Green Beans Stew

Ingredients
  

  • 1/4 cups olive oil
  • 1 large yellow onion diced
  • 2 cloves garlic minced
  • 28 oz diced tomatoes can
  • 1 tbsp tomato paste
  • 2 pounds green beans, frozen or fresh
  • 2 tsp kosher salt
  • freshly ground black pepper
  • 1 cup water

Method
 

  1. Heat the oil in the deep pot.
  2. Add diced onion and garlic.
  3. Let it sauté for few minutes until onion is translucent and garlic is fragrant.
  4. Add green beans, diced tomatoes, tomato paste, salt, pepper and water to the pot and stir.
  5. Bring it to boil and lower the heat.
  6. Let it simmer for 40 minutes to 1 hour.
  7. Adjust the seasoning and enjoy.
