Green Beans Stew

Ingredients
  

  • 1/4 cups olive oil
  • 1 large yellow onion diced
  • 2 cloves garlic minced
  • 28 oz diced tomatoes can
  • 1 tbsp tomato paste
  • 2 pounds green beans, frozen or fresh
  • 2 tsp kosher salt
  • freshly ground black pepper
  • 1 cup water

Instructions
 

  • Heat the oil in the deep pot.
  • Add diced onion and garlic.
  • Let it sauté for few minutes until onion is translucent and garlic is fragrant.
  • Add green beans, diced tomatoes, tomato paste, salt, pepper and water to the pot and stir.
  • Bring it to boil and lower the heat.
  • Let it simmer for 40 minutes to 1 hour.
  • Adjust the seasoning and enjoy.
