Vegan 30 Minutes Chili

Ingredients
  

  • 2 15 oz cans black beans
  • 1 yellow onion, diced
  • 1 carrot, diced
  • 1 tbsp avocado oil
  • 2 cloves garlic, minced
  • 1 15 oz can diced tomatoes
  • 2 tbsp tomato paste
  • 2 cups vegetable broth or water
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1 jalapeno, diced
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 1 tsp cumin
  • 2 tsp kosher salt

Instructions
 

  • In the large pot heat up the oil.
  • Add onion and garlic and sauté until translucent.
  • Add chili powder, cumin, cayenne pepper, smoked paprika and jalapeño. 
  • Sauté it for about 2 minutes until it's fragrant.  
  • Add red and green diced peppers, carrot, can of diced tomatoes, beans, vegetable broth or water, kosher salt and tomato paste to the pot. 
  • Bring it to boil. 
  • Lower the heat and simmer chili until carrot and peppers are tender for about 20 minutes.
  • Try it and adjust the seasoning.
  • Serve and enjoy!
