Vegan 30 Minutes Chili

Ingredients
  

  • 2 15 oz cans black beans
  • 1 yellow onion, diced
  • 1 carrot, diced
  • 1 tbsp avocado oil
  • 2 cloves garlic, minced
  • 1 15 oz can diced tomatoes
  • 2 tbsp tomato paste
  • 2 cups vegetable broth or water
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1 jalapeno, diced
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 1 tsp cumin
  • 2 tsp kosher salt

Method
 

  1. In the large pot heat up the oil.
  2. Add onion and garlic and sauté until translucent.
  3. Add chili powder, cumin, cayenne pepper, smoked paprika and jalapeño. 
  4. Sauté it for about 2 minutes until it's fragrant.  
  5. Add red and green diced peppers, carrot, can of diced tomatoes, beans, vegetable broth or water, kosher salt and tomato paste to the pot. 
  6. Bring it to boil. 
  7. Lower the heat and simmer chili until carrot and peppers are tender for about 20 minutes.
  8. Try it and adjust the seasoning.
  9. Serve and enjoy!
